Leftover roast beef sandwiches

So my family barely managed to finish half of the 3.4 kg roast beef on Christmas day...which may have something to do with the fact that many stuffed themselves with assorted starter bites. But what to do with the huge amount of leftover meat? That's right....Roast beef sandwiches. What else?

My special version also includes leftover cranberry sauce and gravy:



Ingredients (makes 1 sandwich)
  • 1 ciabatta roll (can be substituted for Kaiser roll or any 2 slices of bread)
  • Leftover roast beef, thinly sliced
  • Dollop quality mayonnaise
  • Dollop leftover or store-bought cranberry sauce (a possible substitute is lingonberry jam, or Preiselbeermarmelade in German)
  • Slices of cheddar cheese 
  • Gherkins or pickles, sliced (I would have preferred kosher dill pickles, but didn't have any available)
  • Lettuce
Method 
  1. Cut roll in half and generously spread one half with mayo and the other with cranberry sauce
  2. Arrange roast beef, cheddar, gherkins and lettuce (in that order) on one half of the roll and cover with the other. 
C'est tout. Easy peasy. Serve with a good beer or ale, a packet of chips/crisps (depending on where you're from) and an entertaining movie.
